Del Maguey San Pedro Taviche Mezcal Tequila

Del Maguey San Pedro Taviche is a rare limited edition Vino de Mezcal series expression from a remote mountain valley of Ocotlan, Oaxaca — a blend of three wild agaves, Espadin, Tobala, and Tobasiche, ground together using giant mallets rather than a tahona, fermented naturally with only airborne microbes, and twice slowly distilled in a tiny 150-liter copper still, representing nine years of effort by Del Maguey to make this particular mezcal available.

The three-agave blend at San Pedro Taviche is unusual even within the Del Maguey portfolio — most expressions are single agave variety. The combination of 100% mature unpropagated Espadin alongside wild Tobala and wild Tobasiche (all roasted together in the earth) produces a complexity that no single-agave expression achieves: the earthy tropical fruit of Espadin, the concentrated sweetness of Tobala, and the Karwinskii family's distinctive mineral and herbal character all contribute to a mezcal with many layers of dried sweet fruit, hazelnuts, sweet cedar, and a hint of chocolate mist.

Tasting Notes

  • Nose: Multiple layers of dried sweet fruit — dates and raisins — with hazelnuts and sweet cedar
  • Palate: A hint of standing in a chocolate mist with dark herbaceous dried tarragon and a touch of nutmeg in the background
  • Finish: Long and complex with the integrated character of three wild agaves
