Ayala Champagne Brut Cuvée Perle d’Ayala Millésimé is the vintage prestige cuvée of the Ayala house — a Chardonnay-led Brut from one of Champagne’s most historic houses, founded in 1860 in Aÿ and now owned by the Bollinger group.

Founded in 1860 by Edmond de Ayala, Ayala was one of the 18 founding members of the Grandes Marques de Champagne syndicate in 1882, going through a golden age in the 1920s and 1930s when it was one of the largest 10 houses in Champagne. Once known as “the sleeping beauty of Champagne,” the house re-ascended after being purchased by the Bollinger group in 2005. Based in the village of Aÿ, the style emphasizes a large Chardonnay component and low dosage. The Art Deco cellars from 1912 consist of 1.6 miles of chalk tunnels extending 75 feet underground for ideal temperature and humidity. Wines are crafted by Caroline Latrive, one of the very few female cellar masters in Champagne.
