Woodinville Straight Bourbon is a Washington State craft bourbon named âCraft Whiskey of the Yearâ at the American Distilling Institute Craft Spirits Awards â made entirely from grain grown for Woodinville on the Omlin family farm in Quincy, WA, with rich aromas of crĂšme brĂ»lĂ©e and spice cabinet and decadent notes of caramel, dark chocolate, and vanilla bean on the palate.
Founded by two friends with the late industry legend David Pickerell, Woodinville mashes, distills, and barrels in Woodinville before aging across the Cascades, where Central Washingtonâs extreme temperature swings drive flavor extraction from the oak. Barrel wood is open-air seasoned for 18 months to soften harsh tannins, then slowly toasted and heavily charred before filling.
