Greg Metze brought four decades of distilling experience — including 14 years as master distiller at MGP — to Old Elk's production. The slow-cut proofing process adds fresh Colorado mountain water in small increments over weeks, keeping the spirit cool and avoiding the loss of lighter flavor compounds that rapid proofing can cause.
