Because Marasca cherries are not available in the US, Todd Leopold collaborates with a distilling partner in Croatia to ferment and distill the cherries, then ships the floral marasca eau de vie to Leopold Bros. in Denver, where it is blended with coriander and Montmorency cherry distillate and sweetened with honey — the cherry pits providing the soft almond-like notes the category is known for.

Marasca cherries are essential to authentic maraschino liqueur — historically the only Marasca-derived liqueurs were produced near the Marasca-growing regions of Croatia and Italy. Leopold Bros.’ international collaboration approach produces a maraschino with the genuine Marasca foundation that mass-market substitutes can’t replicate, with the coriander and Montmorency cherry additions building a more complex profile suited to Aviation, Last Word, and Hemingway Daiquiri cocktails.
