Espadin (Agave angustifolia) is the dominant cultivated agave used in mezcal production, here distilled by hand with no automated processes.

Cruz de Fuego launched in 2015 and won awards immediately. The production is fully traditional: agave is cooked in conical earthen ovens, milled by stone tahona, fermented in wooden tinas, and double-distilled in copper pot stills. Espadin is the foundational agave varietal in the Cruz de Fuego lineup, presenting the classic Oaxacan agave-and-smoke profile that defines artisanal mezcal.
