Clairin Casimir

Clairin Casimir 2015 Vintage is a white rum agricole produced at the Douglas Casimir distillery in Baradères, Haiti — part of the Clairin project documenting Haiti’s traditional small-scale rum production. Double-distilled from wild, natural fermentation of fresh sugarcane juice with no commercial yeasts added. Unaged and bottled at natural cask strength.

Clairin is Haiti’s traditional agricultural spirit — produced at small local distilleries (guildives) using methods largely unchanged for centuries. The Douglas Casimir distillery uses sugarcane varieties including Madame Meuze and Cristalline, with natural wild yeast fermentation lasting multiple days. The result is a spirit with profound terroir character — funky, herbaceous, and complex in a way that industrially produced rum cannot replicate.

Tasting Notes

Nose: Grassy sugarcane, wild fermentation funk, tropical fruit, and herbs. Palate: Rich, herbaceous, and funky — sugarcane, green fruit, and earthy complexity. Finish: Long and wild with persistent vegetal character.
